INTRODUCING PAICHE (pie-chee)
Farmed in exotic Brazil in the middle of the Amazon, the Paiche, pronounced PIE-CHEE is an exotic fish that is from the largest freshwater species in the world. In the wild, these fish can grow up to 3 metres long and are also known as Amazon Cod or Arapaima. The farmed Paiche, grows to a fairly large size as well and the fillets are averaging between 2 to 4 pounds each. The fillets come skinless, vacuum packed frozen. The taste of the fish is very nice being very mild and savoury with an excellent texture, similar to a halibut or even an European sea bass. It's an excellent alternative to Halibut or Patagonian Sea Bass as you can make nice thick portions and is difficult to over cook and become dry. Looking for something new, the Paiche will add excellent value to any menu or seafood counter!
